Protein Packed Banana And Blueberry Loaf
This banana and blueberry loaf yields about 10 moderate slices, which is more than enough for the whole week. A slice of this deliciousness is (strategically) a great mid-afternoon snack every day.
- 1 Cup of Wholemeal Flour
- 1/2 Cup Boomers Whey Protein Isolate
- ½ Teaspoon of Baking Powder
- 1 Teaspoon of Baking Soda
- ½ Teaspoon of Salt
- ½ Teaspoon of Ground Cinnamon (can use up to 1 Teaspoon if you want to spice up your life)
- ¼ Cup of Coconut Oil or Olive Oil
- ¼ Cup of Unsweetened Apple Sauce
- 2 Eggs
- 1 Teaspoon of Vanilla Extract
- ½ Cup of Light Brown Sugar
- 3 Overly Ripe Bananas
- 1 Cup of Blueberries (Raspberries are great too)
Pre-heat the oven to 180*C (fan-forced).
Lightly grease a loaf tin and dust with flour.
Mash the bananas.
In a separate bowl, mix together the flour, protein powder, baking soda, baking powder, salt and cinnamon. No need to sift any of these.
Beat the eggs and add them to the mashed banana. Mix in the oil, apple sauce, vanilla and brown sugar.
Add the wet ingredients to the dry ingredients and mix until just combined.
Add the blueberries and lightly fold into the mixture.
Pour into the loaf tin and sprinkle a few extra blueberries or banana slices on top.
Bake for 45 minutes or until a cake tester comes out clean.
Approximately 200 calories, 27g of carbs, 10g of protein and 13g of (good) fats per serve.
